Paleo Chocolate Ice Cream
1- 14oz can coconut milk, refrigerated
1/4 cup raw organic honey
2 Tbsp cocoa powder
1 Tsp vanilla
Place your cold coconut milk, honey, vanilla and cocoa powder in a blender and mix well.
Place your frozen bowl for your ice cream maker in the machine and start it, immediately pour your coconut milk mixture in and let the process begin.
It will take anywhere from 10-20 minutes, keeping your ingredients cold helps it set faster.
Once done, transfer your ice cream to another bowl and place in freezer for 30 minutes to an hour to help set it more.

Paleo Chocolate Chip Cookies
1 1/2c Almond Flour
3/4c Coconut Flour
1/4c Arrowroot Powder
1 tsp Baking Soda
3 Eggs
1/2c Honey
1 tsp Vanilla Extract
1/4c Coconut Oil- melted
2/3c Enjoy Life Chocolate Chips
Preheat oven to 375. In large bowl, combine dry ingredients (first 4). In separate bowl, combine eggs, honey and vanilla. Stir wet ingredients into dry to combine.
Add melted coconut oil and then add in chocolate chips. Place on parchment paper and bake. Bake for 12-15 minutes. Makes around 3 dozen sm/med cookies. Enjoy!!!

Chicken Salad
3-4 chicken breasts
chopped pecans
1 apple (chopped)
dill relish
olive oil mayo
Boil the chicken. Let cool in fridge or freezer, then toss into blender or chop by hand. Add pecans, chopped apple, dill relish, mayo, & stir until well-blended. Goes excellent wrapped up in iceburg lettuce for chicken salad wraps!
Egg Muffins
5 eggs
6-8 bacon slices
1-2 cups broccoli or spinach
1tsp Nature's Seasoning
handful green onions, chopped
optional -> mushrooms, bell peppers, any other veggie-fixins
Makes approximately 12 muffins. Using a vitamix (but any blender or hand stirring/chopping will do), cook bacon & toss all ingredients, minus egg shells, into the blender to pulse blend for 15-30 seconds, depending on how fine you want the mix to be. Grease silicone muffins pans with olive oil spray & pour mixture about three-quarter full into each muffin cup. Bake 25-30 min at 375 degrees (or until lightly browned on top). Let cool, then pop out muffins. These freeze well & will keep in the fridge for up to 5 days. Perfect for that breakfast on-the-go!

Paleo Cookies (abbreviated version)
2 cups ground almonds (almond flour)
1 cup ground walnuts
Fruit (frozen strawberries, fresh blueberries, fresh strawberries, frozen cherries...I've tried them all! Sliced fresh strawberries work really well.)
Cinnamon
1 cup honey
Preheat oven to 350 degrees. Mix almonds and walnuts. Add at least 2 tablespoons of cinnamon (I usually add a ton of cinnamon...until all I smell is cinnamon!). Add fruit and mix well. Soften honey in microwave for about 30 secs. before adding to the mix. Stir well. Place cookies on cookie sheet lined with parchment paper. Bake for about 15 mins or a little longer. The cookies should be nice and brown...not gooey!
